Plant powered + nourishing minestrone (V, GF)

There are a lot of good Minestrone recipes out there, I mean A LOT!

But I wanted to create one that I knew was going to taste AMAZING but also help to nourish my body and support my hormones!

I am not going to bore you with what each amazing ingredient does, or why your hormones are going to love it- but just know that every mouthful is going to help detoxify, support and nourish your body- just like real food should! (Oh and did I mention this is a one pot wonder yasss!)

INGREDIENTS: (All organic where possible)

  • 1 medium yellow onion diced

  • 2 table spoons of olive oil

  • 3 stalks of celery

  • 4 cloves of garlic minced

  • 2 cups of your fave veggies diced (I used a combo of zucchini, carrot, potato, cauliflower, peas, spinach + capsicum)

  • 5-6 cups of your fave organic veggie broth/stock

  • 1 can diced tomatoes

  • 1 Tablespoon miso paste (optional)

  • 2 Tablespoons nutritional yeast (and more to top soup if desired)

  • 1 cup -1 ½ cups gluten free, pulse or spelt pasta

  • 1 can cannellini beans, drained and rinsed

  • Your favourite herbs, I used thyme, pepper, and some dried chilli

DIRECTIONS

  1. In a large pot add the oil and diced onion, garlic and celery. Sauté over medium-high heat for 7 minutes or until the veggies are tender. 

  2. Add the vegetable broth, diced tomatoes, and bring to a boil, then lower to a simmer.

  3. Add in your favourite herbs/ spices

  4. Add the pasta, beans, nutritional yeast, miso, and mixed veggies, and simmer until the pasta is almost tender, add in the spinach right at the end.

  5. Continue to simmer until the pasta is tender.

  6. Serve with your favourite toppings (ie more nutritional yeast, pepper, salt parsley etc!)

Serves 4-6 (or double it and freeze for when you are feeling lazy hehe)
